Whatever you feel best on. 27.5 vs 29er doesn't make that much of a difference when you're entry level. Having gone 26-29-27.5-29 in the last few years the geometry of the bike makes the biggest difference to how it rides. 29 rim diameter is 622mm, 27.5 rim is 584mm, a difference in radius of 19mm. So replacing a 29 wheel with a 27.5 with same make of tire, will drop the bike ~19mm. 165mm cranks “buys back” 10mm of ground clearance. In most situations for most riders, ~10mm less ground clearance is negligible.
So you technically get a better "gear ratio" out of a mullet (assuming everything else drivetrain related is the same, cassette, chainring, etc.) than you do with a 29er. Basically climbs the same as any other 27.5 but with a little less rolling resistance because of the 29 up front.

I don't think the industry is going to go bigger than 29". Already geo has to be a bit funky to deal with 29er requirements. Too many trade-offs to go bigger. I think the bigger change is going to be settling on wheel width (boost vs super boost, etc). 27.5 is much more maneuverable.

Results: The 29er, while feeling a ton faster, was exactly the same speed as the 27.5" wheeled bike. Both days I averaged 10.7 mph. I was shocked to say the least. I almost always 'felt' "fast" on the 29er and the 27.5 felt like it lumbered along. In short, the 27.5" bike felt lazy. I felt like I was piloting the 29er.

One has to run a very large 650b tire before you actually reach a measurement of 27.5in from the ground to the top of the tire. The cycling industry is pushing 650b wheels to be known as 27.5
IME 29 feels a wee bit faster and rolls over a few more things, but whether it’s more fun depends on what terrain you’re riding. What is more fun depends on your riding style and your local terrain/trails. There is no answer outside of that. I ran 2.8 27.5's for 2 years, and I'm back on 2.3 29's now. 29's seem to accelerate and brake faster
I have a professional fit and still have an OTB feeling when descending on the 27.5, the ride is much harsher on the 27.5 and getting bounced around a lot more (big wheels offer a lot of cusion), overall the 29er just feels a lot more stable. The SC Highball is an incredible bike, just a lot different then bigger wheels. .
